Pretty Chill Day

Here’s an update on the giveaway. Since I’m busy all day tomorrow, I won’t be able to pick anyone until super late tomorrow (Thursday)/super early (Friday). Sorry for having to do this but I don’t want to be tied down because of blogging. But hey … it’s a good suspense right? Plus it’s not like I’m running away with the goodies. Forgive me.

Anyway, today was a total opposite of yesterday. TOTAL OPPOSITE.

Yesterday I was so confuzzled and today I was so relaxed. I mean, I still had a lot of stuff to do but I think knowing I was going to see certain people later in the day just made everything float and go by faster.

Breakfast: the most important meal of the day. Yogi Green Tea Energy with very wise words as usual. One of the reasons I love them so much. With a side of avocado and PB2 on wheat with chia seeds. YUM. My coworkers think it’s super weird I eat avocados with toast … and peanut butter. Whatever. They don’t know what’s good.

One of them also said my PB2 smelled like his farts …… gross. They do not.

Giving credit where credit is due: After a long day I just wanted to jet outta there but right when I was about to exit my workplace (good few feet away), I get stopped. Can’t wait for this new parking lot! I sat there in the car for a good 20 minutes until I u-turned and went the opposite way. It was very peaceful and really made me thankful for those that do stuff like this. They don’t get enough credit. I’m glad it’s not super hot yet but once summer hits … oy vey.

Something New: Sissy came home at the right time today. I get the mail when I come home and there were three packages waiting for me. It was like Christmas. I swear the mailman thinks we’re rich …

Sissy got her goodies. Mum got hers. And I got mine.

My first corduroy pants (upon other things). Dark purple with funky pattern. Sorry for my fat thighs. I love ‘em but I don’t know what to wear them with sooo they’ll probably just sit in my closet. $9.60 + 30% off … cheapest pants ever!

Happy Hour: The thing I looked forward too all week. I say all week because tomorrow is my Friday.

I finally invited Jared to Happy Hour with me, Mallory, and Samantha. I also invited Lauren F. and then it became an inviting fest and we ended up with eight people total! I would say the first integration went pretty well. All girls except two guys but I don’t think they mind. I had a lot of fun with them all and it’s great to see everyone flowing together. *sigh*

Sometimes you just gotta see certain people that brighten up your week. It makes life much more worth living.

Bingo tomorrow. I cannot wait.

Day 2: The Past and The Future

This post would have been up already but … I ran out of juice on my laptop and I needed to buy a different plug so I can charge my laptop. Such a hassle.

Mum, Kathy, and I woke up bright and early and had breakfast at this quaint little shop.

I got the Fish Fillet Cutlet with Pan Fried Eggs. It comes with Napa Cabbage, a dinner roll and your choice of drink. I got the Yuan Yang which is coffee mixed with tea.

Then I got my Octopus Card. We put money in it so that you scan your card before and after riding on the subway. It’s calculated by the number of stops and that would be how much you pay when you get off. You can also use the card as a debit card at some places so that’s good since I have zero money.

Kathy went off to work and mum and I started our journey.

I am a Hong Kong citizen since I was born here but ever since I immigrated I never came and got my Hong Kong license when I turned 11. So I finally went and got it today. Took my picture and everything. I will have to go pick up the card in a few weeks. Excited! Smile

Then mum and I went to where we use to live before immigrating. Sai Yeung Choi Street North. The last picture at the very top is where we supposedly lived.

We saw a dog at the window in a restaurant. The restaurant wasn’t open yet but look at him. He. Does. Not. Move. At. All. He just sits there and watches people walk by!

Then we walked into a mall. We walked into a good 3 malls because that’s all you do in Hong Kong. Eat and shop. A little boring because I have no money to buy anything!

We went and ate at a restaurant in the mall. They have cute little swings as chairs! I would want one in my backyard. Smile

Mum ordered the rbt Beef Noodles in Soup and it came with a drink in which she got the kumquat lemonade.

I got the Smoked Salmon in Carbonara Thick Toast. I’m not a fan of the sauce. It tasted weird but my mum thought it was delicious. I think it was a waste of money.

Snapped a picture of the gas prices. They definitely have cheaper gas … around $2 something.

Mum then got a dessert. I’m not sure what it’s called but it’s with Mango, red bean paste, and crème freche. I took one bite and that was enough. Too dang sweet.

We then went to a bookstore in which we looked at books for hours on end. I ended up buying a gift for someone and a cookbook. I’m excited to cook some foods! We went to the mall, bought some things then headed home.

We waited for Kathy to get home for work then Mum, PoPo, and I met Kathy at the same place we had breakfast.

I got the Lemongrass Pork Chop with Braised Pork Rice that came with a drink in which I chose the Lemonade Ice Tea.

They have this thing where you can order less rice which is what I should have done. I didn’t not finish everything. So filling.

I’ve realized Hong Kong people eat A LOT of carbs. Which I am not use to. I need my meat and veggies!

Afterward, we went back to the flat. The luggage man came around 11pm. I was so happy. I finally got clean clothes to wear. No more sticky sticky.

Second day was not filled with foods on my list but I am hoping to cross of all of them before I leave!

Egg Cupcakes

Since Shayna’s done this before, she’s pretty much our cook for the next 30 days.

She woke up at 6:30am and made us breakfast and lunch.

For breakfast she made Egg Cupcakes!! They taste just like an omelet. I only had two little cupcakes but they were enough … surprisingly!

Egg Cupcakes

Ingredients:

  • 10-12 eggs
  • 1 green onion
  • 8 slices of bacon
  • 2 zucchini squash
  • 1 cup roasted red and yellow peppers
  • 4 cups fresh spinach
  • coconut oil
  • black pepper to taste

Preparation:

  1. Preheat oven to 350°F and grease two muffin pans with coconut oil.
  2. Whisk all eggs along with black pepper in big bowl.
  3. Put green onion, zucchini, bacon, and peppers in a food processor and process until finely chopped by not smooth. Add mixture to eggs.
  4. Add spinach into processor, finely chop, and add to eggs in bowl.
  5. Mix the egg mixture well. Use measuring cup to fill the muffin pans with 1/4 cup each. (Makes about 18-20 cupcakes).
  6. Bake egg cupcakes for 20-25 minutes or until eggs are set in the middle.

You can generally put anything you want in there. I believe we didn’t have any bacon in there. As long as it’s vegetables and healthy and in the Paleo diet. You’re good to go.

Overnight Oats In A Jar

I have never been in love with oatmeal.

Actually, I hate oats.

But, I took the plunge and made Overnight Oats in a Jar!

Overnight Oats In A Jar

Ingredients:

  • Almost empty jar of spread
  • Rolled oats
  • yogurt
  • milk
  • Honey Nut Cheerios
  • blueberries
  • strawberries
  • peanut butter

Preparation:

  1. Put rolled oats, yogurt, milk, and peanut butter (I didn’t have enough left over spread in my jar) into the almost empty jar of spread.
  2. Put into fridge overnight.
  3. Add Honey Nut Cheerios, blueberries, and strawberries on top.
  4. Eat.

I added a little bit of chocolate syrup because I always wanted to squirt some of that on something.

Ba-ba-ba-berries!

It was so delicious! Sadly the bottom didn’t get much taste. It tasted too much of cardboard (oatmeal) but I think if there’s more Pralinutta on the bottom, I think it’ll be a different story. Plus, it kept me full for hours. Sweet!!

Rocky is so lazy!

I got to work on a lot of things today. So great getting to sleep in. No work Fridays for the win!

I just got done with my C25K: Week 8! Same Run as Monday and Wednesday.

Felt good. I went on the treadmill again. Decided to give it another chance.

This time instead of just listening to music, I put on Netflix on my iTouch.

The Secret Life of the American Teenager. Let’s just say this show is getting boring but I feel I have to stick it through. Sad? Yes, I’m a sad person.

Anyway, the run went faster than expected. Guess running on the treadmill is okay as long as I have something better to do.

Now I’m running late – no pun intended. Got to get ready and head over to Michelle‘s house.

Cheddar’s Casual Cafe

On the day of my birthday, May 13th, June got work off and my brother came down so we had a breakfast/lunch celebration before the dinner celebration at:

We shared the Triple Treat Sampler [a combination of beef, bean, and cheese nachos plus your choice of two others: loaded potato skins, crispy chicken tenders or mozzarella cheese sticks] | $7.99. We chose the loaded potato skins and crispy chicken tenders. The nachos were delicious. I wish there were more jalapenos though. The potato skins are very regular. I wish we picked something else. The chicken tenders are to die for. They were very juicy on the inside and crispy on the outside. I would definitely come back for the chicken tenders.

June ordered the Grilled Salmon [choose grilled, blackened or bourbon glazed salmon. Served on a bed of savory rice with two sides] | $9.99. She chose the salmon to be grilled and ordered a side of mashed potatoes and coleslaw. She liked it a lot. I tried the mashed potatoes. They were very moist and fluffy.

My brother ordered Shepard’s Pie [a complete meal of seasoned beef and vegetables in a savory sauce, classically topped with homemade mashed potatoes] | $7.29. I’ve never had Shepard’s pie before so I had to steal some from the brother. I loved it and want to go back to get some more. I would order more mashed potatoes on the side though because I felt there wasn’t enough.

I got the Fish Tacos [hand breaded, fried, white fish in flour tortillas, with roasted corn slaw and cajun tartar sauce. Two tacos served with choice of one side. Fresh off the grill version – also available] | $6.49. I got the fresh off the grill selection and this was very delicious. I didn’t use the sauce though because it tasted funny and the fries were okay. Not that great.

I would come back here and get the Shepard’s pie or crispy chicken tenders. Yum!

Z’Tejas Southwestern Grill

On the weekend of the 17th of April, my brother and Tammy came down along with my sissy. Too bad my sissy left before we went to eat delicious food at:

We all shared the Tejas Trio [fresh chips, hand-hacked guacamole, chile con queso with chorizo and salsa picante] | $9.75. The guacamole was my favorite but they gave so little of it. Wish I ordered the guacamole where they make it in front of you. Would of gotten more.

You get a choice of freshly baked muffins or cornbread. I was a little iffy about cornbread (not a big fan) and insisted on muffins but they wanted Cornbread so cornbread we got. Surprisingly it’s the best cornbread I’ve ever had. I would come back for this!

For my main dish I got the Huevos Rancheros [eggs cooked over easy, with Jack cheese, salsa picante and sliced avocado, served with pureed black beans, flour tortillas and home-fried potatoes] | $8.95. The meal itself was very delicious. Only thing I was unhappy about was how they put tortilla chips at the bottom of my eggs, etc. It was super soggy and made it chewy and soft. The potatoes was really delicious though.

I would come back here to try other things. It’s a very simple menu but it’s perfected.

It’s a well known place so it’s a must try right?

Definitely correct! I got Wings ‘N Waffles. It came with powdered sugar and a strawberry. I love, love, love this so, so much. No words can really describe it. I want to go back, order it, and gobble it all up! Their chicken wings were very crunchy on the outside and super moist on the inside. I’m not a big fan of pancakes or waffles that much but the waffle was crispy and soft on the inside. Just spectacular! I’m not sure how much it cost .. but who cares!

I don’t know what it is about chalkboard menus. They make me so happy. I want to have a chalkboard wall in my house in the future but instead of using chalk, use chalk pens. Less mess.

I ordered the Build Your Own Omelet: 3 eggs, bell pepper, onions, mushrooms, spinach, and sausage. It was okay. There wasn’t much taste. Felt like it was super bland but I guess it’s good if you’re trying to eat healthy. It starts off with 3 eggs and a side of bread for $3.60. Every time you add a veggie, you add $0.65, Every time you add a meat, cheese, or sauce, $0.95.

When you build your own omelet you get a side of bread. You can change your choice of bread for $1.00. You should know by now my love for potatoes, therefore I changed it to hashbrowns. Bad choice. These were paper thin and dried. It tasted more like radish thinly sliced. I had to put a buttload of ketchup on it. I don’t like wasting food. I should of changed it to one of the other choices.

My sister said this place is very famous and very yummy. I do not agree and don’t think I will ever step foot here again. Terrible, terrible experience!

Ken’s Donuts

February 4th we ate our Korean food leftovers so we decided to go out for dessert. We landed in:

Jenny, Tammy, and I decided it was easier if one person paid so everything is in the same box. The things I bought were Blueberry Centers (These were not great at all. It tasted better when it was sitting in the fridge for a night. Instead go for the regular centers. They taste way better.), Sugar Yeast Donut (I like when my donuts has little crystals on it and let me just say this was magnificent. So soft and fluffy!), and Glazed Donut (It wasn’t that great. I’ll stick to the Sugar Yeast.).

I would come back here again to try other things that they have but so far I only liked the Sugar Yeast Donuts.
