Say What?!

Does anyone know why it’s going away?! What am I suppose to use now? Gahh help me!! I don’t like when these big changes happen. I don’t want to have to go to every single site every day to see if people have updated! What do you use?!

We had a team lunch today. I got Carne Asada Faijtas. I love the fact that they didn’t roll them up for me or anything and they let ME cut the meat. Let’s just say I had enough for three meals. SCORE! Wished the onions were more grilled though.

Oh … and on the topic of lunch I saw one of my coworker’s picking their teeth after they finished. How gross is that?! It wasn’t even the front ones. It was the back ones … even grosser. Some people obviously need to learn some manners.

We celebrated a coworker’s birthday today … AGAIN. Second time this month and we have another one next week. Yikes. This baby probably weighed around 20 pounds. The layers were humongous and they definitely don’t skimp on the middle frosting. My guess is 8 inches per layer plus a 3 inches for the middle frosting brining it to a big whopping 19 inches … It actually grosses me out. It’s suppose to feed 14 or so people but I think it can feed a good 30 if we slice it in half and then cut it up.

But seriously … with all food aside. I need a new form of Google Reader. Please Please Please HELP!!

I wasn’t a great fan of it.
Pure sugar in the frosting and no taste in the cake part.

Day off = Dentist appointment.
Not a fan of any kinds of doctors.
Got an Asian Dentist … racists. jk.
Got my teeth cleaned and told that I need to extract all four of my wisdom teeth.
Scared. Need to set appointment. Ahh first surgery of my life.

Pretty much ate back everything we burned.
I got a mini strawberry milkshake and almost didn’t finish.
I don’t know how people can do sweets like this.

A Chiuauaua mix.
He was the right height for running and right size to pick up and cuddle with.
Too hyper out of the kennel though and wasn’t potty trained.

Red Velvet Cake for Sissy’s early birthday celebration.
Soooo good. Better than Ooh La La.
We had Korean BBQ to celebrate as well.
No more Korean BBQ for a long while … haha

My life isn’t really crazy wild like others. Anyway, I hope this week is going well for all. We’re almost there! 😉

Red Velvet Chocolate Chip Cookies

I had a craving to bake tonight and surfed the web for hours upon hours before finding the best recipe. It was partly because I was missing some ingredients on certain recipes and it was too late to be going to the store. I knew for a fact I had a box of red velvet cake mix and decided to use that. I didn’t want it to be the same old boring red velvet cake or cupcake, so I decided to look for a cookie and came upon this recipe.

The outside is crunchy and the inside is a little chewy. Just the way a cookie should be. Mmmmm! After eating one, I wanted another one. But I didn’t.

Red Velvet Chocolate Chip Cookies

Ingredients:

  • 1 box of Red Velvet Cake Mix (Duncan Hines)
  • 2 eggs
  • 1/3 – 1/2 cup oil
  • 1 cup chocolate chips
  • confectioners sugar (optional)

Preparation:

  1. Prep baking sheets with parchment paper and preheat oven to 350°. In a large bowl, mix eggs, cake mix, and oil.
  2. Using a melon scooper, scoop and roll the dough with your hands. Flatten it out and put a few chocolate chips in the center. Roll it back up and place onto the cookie sheet. (If you prefer, you can put chocolate chops in after mixing the dough instead of doing the rolling, flattening, rolling method.)
  3. Bake approximately 15 minutes. Cookies are finished when you can slide them without the bottoms sticking to the baking sheet. Sift some confectioners sugar on top if wanted right when it comes out of the oven so it sticks.

Depending on what size you make your cookies will be the factor of how many you get.
By using a melon scooper, I got 22 cookies.
